Please note!
It can be a good idea to first place the diced pepperoni in a colander, then pour boiling water over it, repeat, drain well to reduce some of the fat before adding to the sauce pan. Some say this process degreases the pepperoni, others say it loses much of the pepperoni flavors.

you know what? I think this is a really smart way to use Pepperoni.

Where's the kitchen shots????

Great pictures. I like the black olives with the pepperoni. I would think washing the pepperoni with hot water might turn a little gray. It's greasy for a reason. Nice appetizer.

Well I goofed. I thought i put a note about the images being downloaded from the net. I have made this recipe for football parties. Blowfish is Italian but shuns pizza. This he will eat lots of. But today, he just gets to look at pictures because I did not actually make this for the throwdown.

well Fishy, whether you made it or not, it looks and sounds incredible. This is going to be part of my gameday food preparations. Excellent way to use pepperoni - I'd never thought of a dip before!

Thanks for playing!! xo.

Mmmmmmmm . . . a must for my next party! Blowfish is Italian? AND laconic? Huh.

Cool idea. I'll have to try this.

We boiled down our pepperoni for a soup recipe.

You wouldn't believe the wad of grease that was left over !

Boxer,
It's even pretty good without the pepperoni and a few more spices for the non meaters.

Buzz,
Everyone should grease at their own pace!

Kym,
Some have been known to use this same dip with tequilla-lime nachos.

Pam,
You are banned from that beautiful Kitchen?????

Moi,
Blowfish is laconic in very select waters. He is anything but on life basics: food, wine, sex.

Heff,
Pepperoni is the reason for the term "greasy Italian" isn't it?
