Beef and Bean Throwdown














































Lemon Mint Marinade/Dressing

1/3 cup lemon juice ( 2 lemons)
2/3 cup EVOO
1/3 cup packed mint/finely minced
pepper and salt to taste

LemonMint LondonBroil Salad
We use just lemon juice and pepper to
marinate the London Broil but you can
use the dressing as marinade as well.
Green beans are lightly steamed then
we marinate these, still hot, while
the meat is broiling.

Goes great with lightly warmed Mediterranean
flat bread, but I forgot to buy some!

I think you nailed the donenes on the London broil. I always have a tough time with that. Cook it too much and it gets tough. Simple elegant flavors that lemon and mint. Did you use the same marinade on the beans too? A nice glass of Rosé would probably go well with this to make a nice lunch.

I'm glad you particpated! What a great combo. Karl is right, it's a nice lunch or light dinner. Mr. Boxer has learned over the years to order his beef when we're out in restaurants and this is something he'd love.

As you may can see, I multi stab the slab so the lemon juice makes it to the center. I typically do this after the steak has reached room temp and about 90 minutes before coking the slab.

Yep, overdone LD approaches the leather category in a hurry. Can't really tell you how I do this, I cook by my sense of smell and sight not by logical means like timers . Yes I do a light dose of the lemon mint marinade on the beans while they are still hot from the steam bath. Since we don't use salt the citrus-mint combo enhances without the sodium overload. Blowfish had Merlot with his.

This is good with asparagus as well as green beans. Also good with the 3 bean thing iffen ya do it yourself. The canned three bean thing has a brine which does not go well with the lemon-mint.

Fire up that grill! Grilling that London Broil just improves the lemony marinade.

Im still not any the wiser as to why that steak is called London Broil :) However, the salad looks really yummy! Now that Ruf has gone home, I shall try to invest in some filet or rump later in the week :)

I love steak on salad! And the mint/lemon combo is a true winner. I'd do this with gus fo sho! Good that you can eek out oodles of flavor without any salt! Great job Fishy!
